Emulsion made from boiled jalapeno and onion, with fresh garlic and cilantro, balanced with honey, lime, and salt. It is best when the jalapenos are best

- 3/4 cup vegetable oil
- 1-2 tbsp honey
- 1/2 tsp kosher salt
Steps
- Prep => pull or cut stems off jalapenos. Cut or tear half-onion into big chunks. Rough chop garlic and cilantro
- Boil => put jalapenos and onion into pot and boil until peppers turn army green, ~15 minutes. Drain
- Blend => Combine everything into blender. Blend on the highest setting for ~30 seconds. Scrape down the sides and taste, in case it needs more honey, salt, or lime. Then blend for another ~30 seconds
Notes
- Jalapenos => also good with some serranos or poblanos in the mix
- Cilantro => include the stems here, they carry most of the flavor
