Green Sauce

Ingredients

  • 5-6 jalapenos1
  • 1/2 yellow or white onion
  • 1 garlic cloves
  • 1 handful cilantro2
  • 1 lime

Not

  • 3/4 cup vegetable oil
  • 1-2 tbsp honey
  • 1/2 tsp kosher salt

Steps

  1. Prep => pull or cut stems off jalapenos. Cut or tear half-onion into big chunks. Rough chop garlic and cilantro
  2. Boil => put jalapenos and onion into pot and boil until peppers turn army green, ~15 minutes. Drain
  3. Blend => Combine everything into blender. Blend on the highest setting for ~30 seconds. Scrape down the sides and taste, in case it needs more honey, salt, or lime. Then blend for another ~30 seconds

Notes

  1. Jalapenos => also good with some serranos or poblanos in the mix
  2. Cilantro => include the stems here, they carry most of the flavor
